First, welcome to NiFi! Currently there is no configuration option on the HandleHttpResponse to not return a body and no processor that explicitly removes the content from a FlowFile. Adding a configuration option to HandleHttpResponse shouldn't be difficult if people think that's the way we should go. That being said, as a work around you could use the ReplaceText processor to replace the entire content of the FlowFile with nothing. This should return an empty body as a response.
