Christian,

Yeast is a living organism that can multiply given the right circumstances. 
While that might also occur in a brew proces, it is unlikely to be applied. 
Yeast cultivation could/should be a separate manufacturing process to ensure 
that the end product doesn't have any contaminations. 
In fact, many of the larger brewers (e.g. Heineken) do produce their own yeast 
strains to ensure end product uniqueness.

It should be possible to calculate the expected yeast residue, or 
yeast-extract, based on the input parameters (output of the previous task + 
yeast), but I haven't seen a formula so far. 

As far as OFBiz Manufacturing goes, in current feature you can set a 
deliverable product on a task (as a by product), but an expected quantity or 
ratio cant be set.
