Thanks for working on this. I always thought that, for packets, the opposite of fragmentation was reassembly, but I hear the word "defragmentation", as used here, more and more these days. I don't know whether it's considered an "official" term. In the ovn-northd manpage, the DNAT section has a single bullet point with lots of paragraphs. Probably, each paragraph should be a bullet point, because each one describes a category of flows.
