I presume you mean the FontBox snapshot jar, rather than the whole of PDFBox?

FontBox is now mostly stable, there are some new APIs which I'm planning on 
cleaning up a little before the final release, but only very minor changes. 
There are no outstanding regressions or open showstoppers for FontBox, so using 
a snapshot release should be fine. Just make sure to note which revision of the 
trunk you use, for filing bug reports later.

If you need any help porting code over to 2.0, feel free to ask on the mailing 
list, especially if the source is already public.
