You forgot to add the fontbox jar. Alternatively, use pdfbox-app-1.8.9.jar

this has most of what is needed.
(There are more dependencies, see
https://pdfbox.apache.org/1.8/dependencies.html , but I think you won't need
them as these are for graphic stuff, and you do text extraction)
