No idea on that one. The object numbers are identical. The annotations becomes
a direct object, but changing that one results in Adobe claiming that the file
has been modified (but still doesn't show the second signature), there is a
source code comment warning about that.
I haven't checked whether the XRef is OK. Also not yet looked at older issues
(I think we had something like that before).
The resigned file is displayed properly on my Android phone with Adobe Reader
there. But not on the desktop.
Could you sign the "signed once" page with itext or with Adobe a second time?
