You should not need to recompile the code. We would recommend using pre-built binaries or jars hosted on Maven Central. We would expect the code to run ok on Adopt OpenJDK 11.0.x - you will need to have a JRE or JDK installed. If someone creates a file using Excel 2019 - the biggest concern would be if they use Strict OOXML or Transitional OOXML formats - POI does not support Strict OOXML format.
