Smx4 camel demo fails because the *itests* directory is missing

The **/itests/** directories are missing from the demos and causing those demos
to fail during their build.
The assembly descriptors explicitly exclude these directories but these
directories don't exist in the 3.3-SNAPSHOT either
from where the descriptors take the examples from after unpacking it in its
local target dir.
So we either need to update the pom's or include these directories.
