Currently we build by default with Java 11, 17 and 21
(https://github.com/apache/sling-tooling-jenkins/blob/94f33ce73cc3d00495fb9839a99ebb35fc57dea0/vars/slingOsgiBundleBuild.groovy#L20).
As the most recent parent versions require Java 17 I would propose to drop
Java 11 from the default. Per module/repo one can still overwrite though.
