could you mention a workaround for this problem. is it somehow possible to 
"catch" the form data before it's passed into hibernate and modify illegal 
utf-8 characters, which are displayed as ? in IE?

This is *obviously* an IE bug. The question is if we "want" to fix (read
"work around") this bug, or let the Microsoft team to fix it. I am biased
for the second option, though I know very well that Microsoft do not want 
to
fix bugs but only security problems.
BTW, what's the version of your IE? Did you try with another version?
