FYI: I found that "xmp-pdf:keywords" (from the XMP-pdf metadata) is reported by 
Tika as "meta:keyword".

So now I can actually determine the original "dc:subject" by removing the 
entries from the following tags reported by Tika:
 * meta:keyword
 * pdf:docinfo:keywords
 * pdf:docinfo:subject

But it would be very nice to have access to the precise underlying data, this 
feels a bit as a hack that might get broken in the future.
