[https://github.com/apache/tika/pull/3313] showed the fragility of the inner
classes.
The basic idea is that for some configs, even if "config is allowed" we do not
want clients able to change those values. Let's put \@operator or similar
annotations on fields that should not be modified at runtime to make this less
brittle.
