http://framework.openoffice.org/documentation/mimetypes/mimetypes.html
has an example section for apache. - there it is put into httpd.conf -
is this outdated?
If so, the webpage should be updated to reflect current way to do this.

assign the extension as well
AddType application/vnd.oasis.opendocument.chart .odc

Apart from that: yes. But maybe adding the non-IANA types is a good idea?

the http://framework.openoffice.org/documentation/mimetypes/mimetypes.html
lists the older StarOffice formats as well
