Another idea occurred to me, similar to "D" (use alternatives) and incorporates "A" (delete the current epel-8) for their to be something such as having a "mock-config-epel-default-base-rhel" and "mock-config-epel-default-base-alma" and "mock-config-epel-default-base-rocky" rpms (or whatever the agreed upon names would be) that would create the (raw?) epel-8 symlink, and conflict with each other.
