For a handful of tests yesterday it was set to that. All day today it's back to 
default NAT, and the VM hasn't even been used.

I just deleted the VM in virt-manager, and on reboot I still have the same 
problem. So if the problem is related to once having set a VM to macvtap 
bridge, then it's not cleaning up after itself once I no longer use that 
setting, and have deleted the VM.
