I generally make a copy of a log file and edit the copy, but I'd
oppose anything that took away the ability for log files to be edited.

Nobody is taking that functionality as has been pointed out several times already you simple pipe the output from the journal to a separated file heck you can even filter that immediately then and there with the journalctl command
