When updating to linux-3.0, using kernel switcher, exact command:
kernel-switcher switch linux-sabayon-3.0-r3

I got this output, after the usual modules installation:

 * Updating module dependencies for 3.0-sabayon ...
[ ok ]
 * Please report kernel bugs at:
 * http://bugs.sabayon.org
 * The source code of this kernel is located at
 * =sys-kernel/sabayon-sources-3.0-r3.
 * Sabayon Linux recommends that portage users install
 * sys-kernel/sabayon-sources-3.0-r3 if you want
 * to build any packages that install kernel modules

it seems that kernel-switcher tries to eselect the:
linux-3.0.0-sabayon
kernel, but eselect kernel list reports:
eselect kernel list
Available kernel symlink targets:
  [1]   linux-2.6.39-sabayon
  [2]   linux-3.0-sabayon

So it should actually set the:
linux-3.0-sabayon
kernel.

I am using Sabayon 6 Gnome, fully updated from Limbo, amd64
architecture.
