FWIW we set this checksum property on the dump zvol normally in `zvol_dumpify` and `zvol_dump_init` (see around https://github.com/openzfs/openzfs/blob/master/usr/src/uts/common/fs/zfs/zvol.c#L1873) -- if we were to special-case allow a dump zvol to be unencrypted under an encrypted parent, we would probably just do it there (it wouldn't have to be in the cmdline tools, if that helps).
