One common technique used by several project systems and mailing lists is to quote email addresses as "dave at beermex dot com". I have no idea how effective it is at defeating harvesting (I would guess it must be pretty effective or people wouldn't do it, although it suggests a lack of thoroughness on the spambot writers' part).
