The reason you only see a frame where the eps file is inserted is because
staroffice doesn't contain a full postscript interpreter (and doesn't make
use of ghostscript, which can render to an X window if asked).  If you
print the document, the images should display correctly.  If it really
bothers you, you could try exporting to cgm using the filter found in
dia-0.83 (note that this filter is incomplete, and will not give as good
results as the EPS one).
