You can double click on the text button in the toolbox to bring up the
defaults for that tool. This will affect any future text objects you
place. Double clicking on a placed text object will bring up its
properties window, from which you can set the font.
As far as documentation, there was/is a dia documentation project, but
their web site seems to be down at the moment.
