Use 'BSDtar' over SSH. It's the most simple and elegant way, and AFAIK the fastest possible. Read the bsdtar manpage, so you preserve mtime and hardlinks.
You can even get a fancy status output with 'buffer'. Run your copy process from within screen, so you can detach and quit the client.
