I've never used BTRFS but assuming you can mount snapshots like a normal filesystem (which a quick google seems to confirm), you just need to use the snapshot as the source directory to be backed-up. Use a pre-client script to manage the snapshot (create & mount) and a post-client to unmount and destroy it, as discussed a few weeks ago on this list.
