Hi, There isn't currently a way in the plugin to change the first day of each week. This is on my TODO list and will get done when I next get a chance to work on the plugin (unfortunately this won't be for at least three weeks).
If you are desperate for a version of the date picker where the weeks start on Monday then let me know and I can send you a version that a guy called Javier Infante edited and sent to me?
