what works for a portfolio is a matter of preference and is largely determined by who your intended audience is.
i think anyone focusing on UI and IxD, should probably have a portfolio with one or more screen shots of your work, a description of the project, your direct role, tools and techniques employed, a link to a finished product (if possible) and possibly ancillary links to related items like documentation or sample files. i wrote my own portfolio tool - it offers most of the above and supports an site-friendly version and a printer-friendly version. it's definitely NOT fancy but it's fast, extensible (can support more more and works with any web page layout) and most importantly, does the job.
