Jakob Nielsen has some guidelines regarding number of users for
usability test, and I guess they apply to field studies as well.

Personally, I think the statistical significance is rather
unimportant when it comes to initial research and field studies. But
if you have a certain goal of improved efficiency (like "the tasks
should be performed x % faster") you need to be more meticulous.
