Hi, Fred is what you would call a "smarthost" in MTA parlance. How to configure edge systems to relay mail to your smarthost and how to configure the actual smarthost to relay correctly varies drastically per MTA system but is well documented once you know what to Google for :)
Note that the edge system may not need a full blow MTA running on them. Something like ssmtp, dma, etc.. may be simpler and more secure.
