A mxd stores simbology information, but it also stores any projections made
to the dataset (on-the-fly, not to the coordinates), grids, position of
layers, any other graphic objects, etc.

If I can remember right, apr was the extension for ArcView 3.x "mxd" and avl
is the .lyr files. The .lyr stores only simbology data, and they can be
exported from ArcMap, but they are a closed format that you _should not_
mess with.
