Good question.  I was wondering this myself.  When I create .m3u
playlists for albums I'll often leave out one or more tracks. 
Sometimes it's vocal commentary, sometimes "bonus" tracks that detract
from the album as originally issued.

An easy work-around would be to just leave the track in place, but give
it a bogus non-music extension.  Do a rescan (probably requiring a 'wipe
cache') and the track won't appear in SlimServer and "All Songs" will
skip it.  The downside is that the track won't be playable by anyone
else using the system.
