I tend to avoid Terminal for these things. There are some areas where it is the best way to do things, but I usually find the GUI more convenient. It is good to learn to use it, but it can be a bit scary, especially for new users.
I am doubtful about putting lame inside the SqueezeCenter preference pane. Mainly because it would get deleted when SqueezeCenter is updated. I reckon one should not mess with the preference pane unless essential. /usr/bin, should work fine, and is also a place where other programs can find it if necessary. /usr/local/bin may well not exist. I think my original installation of lame created it for me, and a few other programs use it.
