That should be fine. Just make sure the iTunes Update history file is saved somewhere on the server that the XP machine can access, then run the updates whenever you have iTunes open or the XP machine on.
No updates while the XP box is off indeed, but all you'll be missing is updating of the iTunes smart playlists I guess.
