Both SBS 7.4.2 and 7.5 embedded work just fine on my Win7 ultimate 64bit box. No problems at all. I think you'll see the bulk of the development effort tending towards making SBS runnable on lower horsepower hardware...not the reverse. I'd be very surprised to see a 64bit version anytime soon.
