I'm wondering if it's possible to have a playlist (or dynamic playlist) of my recently added albums... basically so I could make a preset of this and have it as if i browsed to "New Music" and started adding the albums there from the most recent one.

On a related note, does the new Spotify library integration in LMS 8 add your newly saved albums to the New Music view, as if you just added files to your server?
Yes, if the service provides some "added at" timestamp, then this will be used for the "new music" menu.
