Foobar2000 definately. Plays FLAC very well, and supports gapless playback.
Not very elegant UI, but functional. Otherwise, you could use Winamp, but you'll need to install a plugin to play FLAC files - available from the winamp web site. Just want to make sure I understand : how are you using SlimServer's mp3 streaming ability, I mean which mediaplayer are you using? For example, are you using Winamp, then "open URL", and dropping that streaming URL in there? That works well for me. SlimServer will transcode your FLAC files to MP3.
