I don't use iTunes to purchase music, also prefering to purchase CDs and rip to FLAC instead using the excellent Max utility.
I have a couple of Applescripts that I use to transcode from FLAC to my iTunes library (MP3) for playback on the Mac itself and syncing to the iPod.
