Just some guesses but... jdvmi - might you have both id3v1 and id3v2 tags in your mp3 files? mp3tag will tell you if you have both. If you have different information in the two sets of tags, its quite possible slimserver has got confused.
wesg - you're using FLAC so that won't be your problem. But are you sure you've done a complete clear and rescan of the slimserver database?
