There's a bug open for this http://bugs.slimdevices.com/show_bug.cgi?id=4180 But I don't think there's been much progress.
I searched around last week and there still doesn't seem to be any documentation anywhere of how to link a track to an art file using only what's in the library xml. I doubt Apple are going to provide any but I'm surprised no-one else has figured it out yet! And I still don't know how to easily view the .itc file content on Windows or I'd have a look. It is a shame because I now have artwork for almost all my music but can see none of it in SlimServer!
