I know that you do not want to link iTunes to SlimServer, but have you considered using the "Unchecked Songs in iTunes" feature under Home/Server Settings/iTunes?
To do this you would set the feature to "Don't include unchecked songs" and then only check the songs in iTunes that you wish SlimServer to import.
