Are you sure there's not an ARTISTSORT tag in the files? (see http://wiki.slimdevices.com/index.cgi?SlimServerSupportedTags for the tags and how they're used by slimserver). To check, select one file in MP3Tag, and hit Alt-T - that should show you all tags, including those not shown by the default MP3Tag display.
