SqueezeCenter doesn't write tags -- it uses the tags you have. If your TAG program won't do it, you should try one of the other Mac programs listed in the wiki, such as Media Rage, MusicBrainz, or ExcelTagger. I don't think you've ever said what format your files are, but if they're FLAC, you could also use the metaflac utility that comes with Flac http://flac.sourceforge.net.
