One way to do this would be to run multiple instances of SC. If you want to run these on the same box, you would need to use different IPs for each instance. You'd probably also want to use a "system-installed" MySQL instance (rather than the one that comes with SC) with a separate database for each SC instance. Alternatively, you could run SC on separate machines with the libraries mounted remotely.
