I'm not sure exactly how upgrading memory makes a difference, but it certainly has made things run more smoothly with my iBook and I don't notice this sort of thing all that often. Only when I have several apps open at once.

I find it interesting that just closing a window or two usually fixes it. The only thing I can come up with is that it's memory related, though it could be a combination of memory and cpu, though I've not noticed if the cpu fan is on most of the time when this happens or not.
