Hi. I've been using a usb headset which I'm quite happy with. It's a plantronix, but I can't remember the model number. Holly uses the internal mic on the Mac Book however. It actually does do a much better job then you'd expect of an internal mic, though it does pick up a lot of room noise. Of course it goes without saying that if you're planning on recording from the internal mic, make sure you've got some headphones plugged in.

Hi Scott. The way I've been doing it doesn't require any extra plugins, and you don't have to adjust the volume for voice over. The recording comes out really good, when playing it back, you can't tell the difference between voice over and the recording.

Yes it can be done, but first you'll have to cut the volume back for VO significantly. This all can be accomplished with a couple of plugins via the effecs tab. I know I need to get on this to do a demo, I've just been overwhelmed with work and such. Let me see if I can push this way up the priority stack and get something together.
