I wouldn't bother converting to AAC if your files are already MP3,
doing that may result in a significant quality loss. If you're
burning straight from CD or another source then you may as well use
AAC, the quality is a little better.
Lately I've gone away from using Itunes, I don't find it as flexible
as say Max Ripper for example, with Max I have a wider variety of
formats at my disposal including the very interesting .ogg, .flac etc.
