Yes, just like Windows. If you want to burn DVD video discs for your living room DVD player, that's a little trickier. Audio CD's are easy with iTunes.

Yes.

Yes, just like Windows, there are shortcut keys for most common commands. And, unlike WIndows, you can even add hot keys to any menu commands that don't already have them.

a quick way to read mail, with out doing different command interactions?

Interactions aren't a bad thing, but the answer is yes anyway. Pressing VO-J on a message will read it automatically if you have the preview pane showing, and pressing enter on it will open it and read it too.

 is there a hot key that we can use for spell check in any program?

Yes, Command-Semi-colon works in virtually any program that accepts text for spell checking.
