Audio Recorder will do stereo recording up to 192kHz and 32bit and is
free. It can output in a number of formats including WAV. To record to
mp3 you'll need to install the LAME library which can be found a number
of places such as here:
http://spaghetticode.org/lame/
Once installed you can directly record to mp3 up to 320kbps.
I usually record to full quality audio and compress later. The app seems
very reliable. I've never had it crash so now I use it to record live
events without too much worry instead of dragging in a DAT or CD
recorder. The controls seem to be simple and very accessible.
