Interesting. For broadcast in the states subtitles are encoded into the
video and I thought that subtitles were multiplexed into the MPEG file
for DVDs as well. This multiplexed data is presented as "tracks" which
the DVD player can turn on and off. Maybe the copies you were poking at
were already de-muxed. At least there seem to be a lot of shareware and
commercial packages which claim to do this subtitle demux or ripping.
