You don't seem to have finished your description of the problem, and it looks as though there is not enough information to understand what you are doing, especially for people who don't use NiceCast. However, I'll take a guess and say that you're probably playing from a playlist, and the default option for how the playlist was set up includes shuffling, especially if you're using a playlist named "Party Shuffle". You can turn off shuffling either by VO-keys-Down- Arrow from the "Sources Outline" and then VO-right to the "Do Not Shuffle"/"Allow Shuffle" button and set this to the option you want, or use the Controls menu on the iTunes menu bar (VO-keys+M then type "C" to go to Controls and arrow down) and turn off the Shuffle option.

If you don't want to listen to recently played songs, create a smart playlist that has a rule like "Last Played: is not in the last: 2 weeks" and use that as the playlist you stream or optionally shuffle from.

You can also modify the way shuffling is done from the Playback part of your iTunes preferences (Command-comma to bring this up; VO-right to "Playback" tab and VO-space to choose this menu). There are sliders for setting the likelihood of sequential songs by the same artist or album, etc.

That said, maybe someone else who uses this application can help you because I don't use shuffle play or Nicecast myself.
