If quicktime compatibility is your goal, you want to rip into an mp4 container, not an avi. I'm putting together a list of all the settings I use and how to make it work--I know you don't care about putting movies on an iPod but these are all-purpose settings that will work on just about anything that supports mp4, including quicktime and iTunes.

Can someone please e-mail me very specific instructions on how to do this? I gotta few dvd's I wanna rip into AVI. I'm not planning to put them on an IPod, so that doesn't matter. I just wanna rip them so that I could play them with quick time not having to have the dvd in the drive.

Have a look at MacTheRipper. Also, if you're going to convert a DVD to an mp4 or avi file, consider using Handbrake instead of Visualhub. In my experience you get much better results from Handbrake. And hey, it's free, might as well give it a shot.
