It's possible. How easy or hard it is depends on exactly what you have in mind.

This is straight forward. You can do it yourself without much trouble. All the work lies in actually making a fairly complete dictionary of Latin words.

First, go to Tools > Options and select Language Settings > Writing Aids. Click on "New" to make a new (empty) dictionary. Click on the dictionary and click Edit to start adding words to it. Put a check mark next to the dictionary to use it. When you run the spell check on a document you'll be able to add new words to the dictionary, etc.
